The main thing to look for in a good oyster serving platter is deep sides. The colder a raw oyster, the better, so it is ideal to serve your oysters on a bed of ice, preferrably shaved ice. Metal serving trays are generally considered the industry standard as they pack and preserve ice well.


When serving cooked oysters, cover the bottom of the platter with half an inch of culinary grade rock salt (aka ice-cream salt) to keep the liquor from spilling.
